Farmer’s Market Finds: Side Dishes
We are so excited to share with you some delicious recipes that we created from foods that we purchased at the market last Saturday! These yummy side-dishes that we will be sharing with you this week are drool-worthy. The Farmer’s Market is a great place to pick up amazing produce, meat and other tasty goods. We got most of the ingredients for these two side-dish recipes at the market! Make sure to attend the market this Saturday to get ingredients to make these tasty appetizers for your friends and family this weekend.
We picked up some brussel sprouts and sweet potatoes to cook up these delicious sides. First up, our Brussels ‘n’ Bacon recipe!
To start off, you’ll want to turn your oven to 400 degrees and cook your bacon. Once it is fully heated, put your bacon in for 12-15 minutes depending on how crunchy you like it! As you can see, I used 5 pieces… But you can definitely use more 🙂 Also, I like my bacon on the crunchy side! Yum.
To make these, you’ll want to get about 3 cups of brussel sprouts. Cut off the bottom, and toss out. Then continue to cut each one so they are small circles. Like this:
After you’ve cut up all of your brussel sprouts, you will put them in a bowl and toss with the 2 tablespoons of avocado oil. I already had some Avo Oil on hand, but you can get it at the Farmer’s Market!
Put your brussels in a skillet and cook until they are bright green and tender… don’t be afraid if they get a little burnt/brown. This gives them a little crispiness!
While your brussel sprouts are cooking, you can chop up your bacon into small bits so that it is ready to go when your brussel sprouts are cooked.
Once your brussels are done, lay them out on the tray that you cooked your bacon. Put the chopped bacon on top. Squeeze the lemon half all over the tray of brussels and bacon. Sprinkle your garlic powder and grind your salt and pepper to your liking.
Finally, toss in the oven on broil for about 5 minutes. Be sure to keep a close eye so they don’t totally burn. This step gives you that overall crispiness that is to die for!
Viola! Your brussels ‘n’ bacon are complete! Now, chow down with a nice entree.
Second, we will be cooking up some sweet potato fries! To spice things up, I grabbed some purple sweet potatoes from the Orange Home Grown Market. These potatoes are super high in antioxidants!
To start off, set your oven to 400 degrees. Then, you’ll want to clean your potatoes off in the sink with a sponge. There is a big difference between dirty and clean potatoes!
Secondly, poke your potatoes with a fork so they can breathe while baking. Then wrap them up in foil and set in the oven. The potatoes need to cook for about 40 minutes until they’re ready.
When you take them out of the oven, they should be slightly soft. Take them out of the foil and let them cool off for about 10 minutes. Once they are cooled so you can touch them, cut them up into strips.
Once your potatoes are sliced up, the fun part begins! Scoop out a tablespoon or two of coconut oil so that it coats the pan and has a little extra. This is one of the most important parts, so make sure you always have enough oil in the pan. You don’t want your fries to stick, and this also ensures that they get nice and crispy! After the first batch of fries, you will have to add more oil to your pan.
You can season them with anything that you would like. I chose to use garlic powder, salt and pepper. I love garlic, so I heavily sprinkle that over the fries. Other tasty seasonings include Lawry’s, paprika or chili seasoning. Fry each batch for about 8 minutes, flipping the fries so they get crispy on each side.
Cook up all of your slices of potato, and then you’ll have plenty of fries for either a side dish or a delicious appetizer! Yum!
